Hi Charissa I've just finished making the sour cream enchilada's. As I was making them my daughter (10) walked in. ( not a good time to be adding spinach. "Yuk. What are you making". ..... After having seconds she is taking some to school tomorrow. Thank you as she is a very fussy eater. I had more mixture than I did tortillas. Do I freeze the mixture now, or do indeed to get some tortilla, cook them and then freeze. I am new to the gluten free, real food, cook from scratch lifestyle, so I don't know a lot about freezing etc. Thank you very much for you ideas and recipes may God bless you abundantly Carol-Anne xx

Yay! Your comment Carol-Anne made me do a happy dance! I am so glad you and you daughter liked the enchiladas. Regarding freezing the mixture, I have not done that before, but I don't see why not. I freeze the rolled up enchiladas (both pre and post cooking) all the time and the mixture turns out just fine. I would freeze the leftover mixture in a plastic container, then thaw, then put it in the tortillas and cook like normal. If I end up with leftovers, I often will eat the mixture with rice or by itself for lunch. Thanks for stopping by Carol-Ann!
